In the galaxy of Star Wars, Jedi Knights usually choose to carry a lightsaber and use the Force with the other hand to knock away enemies or parry their lightsabers. It's also a good option. Their lightsabers are all crafted for themselves in specific ceremonies. Depending on their fighting habits, some Jedi Knights may choose to have more than one lightsaber made for them to use.

Anakin Skywalker 

In "Star Wars: Attack of the Clones", Anakin witnessed his master Obi-Wan fall and decided to take on Count Dooku with his master's share. At that time, Anakin held two lightsabers, which he wielded very smoothly, engaging in a fierce battle with Count Dooku. Anakin first cut off the energy supply device of the spaceship with his lightsaber. Even if Count Dooku managed to escape, he wouldn't last long under Anakin's pursuit. In "Star Wars: Revenge of the Sith", Anakin and Obi-Wan were assigned the mission to rescue the Chancellor. They sneaked into Count Dooku's spaceship. Just as they found the Chancellor, they were discovered by Count Dooku. In the first round of the fight between Obi-Wan, Anakin and Count Dooku, Obi-Wan was thrown away by the Count's Force. He didn't give the Count a chance and seized his lightsaber, creating the famous scene of the first Jedi using a Sith's lightsaber in the movie. Under Palpatine's inducement, Anakin killed Count Dooku.

Anakin was Ahsoka's master. It's quite normal that Ahsoka Tano would fight with two lightsabers. 

In the final days of the Clone Wars, Ahsoka received an alliance invitation from Bo-Katan Kryze to fight against Darth Maul. Ahsoka engaged in a spectacular duel with Darth Maul, wielding two lightsabers. During this alliance plan, they successfully captured Darth Maul. Why do Jedi Knights use a lightsaber in battle? 

The difference between using two lightsabers and using one is not significant; both have their advantages and disadvantages. 

Advantages: Using two lightsabers can put psychological pressure on the opponent, but a powerful opponent usually doesn't care about this. More attack methods and dual lightsaber techniques. 

Disadvantages: The attack range increases, but so do the vulnerabilities. The force is dispersed, making it easy to be knocked away by the opponent. The skills of Force knockback and Force defense are lost.

Darth Maul

He successfully killed Obi-Wan's master, Qui-Gon Jinn, with his double-bladed lightsaber, but was cut in half at the waist during his duel with Obi-Wan and fell into a molten pit. However, Maul did not die. Relying on the powerful dark side of the Force, he survived in the form of a six-legged spider and was fitted with mechanical legs by his brother, Savage Opress.

Maul embarked on his path of revenge. During the Clone Wars, he fought Obi-Wan multiple times and attempted to build his own power base. However, his plans were repeatedly foiled, including being captured and secretly imprisoned by Darth Sidious himself. Revenge was always on Maul's mind. After escaping from imprisonment, he used Mandalore as his base and tried to establish his own power. He captured Mandalore's former Prime Minister, Almec, and used him as a puppet leader to control Mandalore.

During the period of "Star Wars: Attack of the Clones", General Grievous broke the record for the number of lightsabers used in lightsaber duels. He used four lightsabers in battles against Jedi Knights and could also use two lightsabers separately.

In this war, General Grievous, as the military leader of the Separatist Alliance, led his troops to fight against the Galactic Republic, bringing unprecedented and devastating disasters to the entire galaxy. He had fought against Ahsoka Tano and Obi-Wan Kenobi many times, but managed to escape successfully each time. 

 

  • Having received rigorous training: He was trained in lightsaber combat by Count Dooku, traveled throughout the galaxy, invaded various planets, and fought against Jedi Knights. 
  • Commanding the separatist army: General Grievous led the droid army of the separatists and engaged in numerous fierce battles with the Republic's forces. With his outstanding military talent and command ability, he posed a huge threat to the Republic's army. 
  • Clashing with the Jedi: As one of the main adversaries of the Jedi Order, General Grievous engaged in numerous lightsaber duels with the Jedi. He had a particular fondness for collecting Jedi lightsabers and displayed them as trophies to show off. In battles against Jedi such as Ahsoka Tano, he demonstrated formidable combat prowess and the advantages of his mechanical body. 
  • Plotting conspiracies and committing murders: General Grievous was not only an outstanding military leader but also a ruthless killer. He planned and carried out numerous conspiracies, causing significant losses to the Jedi Order and the Galactic Republic. He slew many Jedi Knights, including some important Jedi generals and commanders. 

 

His actions were also noticed by the Jedi Council, which dispatched the outstanding Jedi Master Obi-Wan to deal with the situation. Eventually, he was eliminated by Obi-Wan

 

Asajj Ventress 

 

Like General Grievous, Asajj Ventress was trained rigorously by Count Dooku. Throughout the Clone Wars, she served as a Separatist assassin, causing much trouble for the Jedi. During an assassination attempt, she engaged in a fierce lightsaber duel with Ahsoka in an attempt to kill Unduli, but failed and fled.

During a mission, Ventress and General Grievous piloted a spaceship to infiltrate a clone factory to steal the DNA database, but were discovered by Skywalker and the mission failed. Ventress' performance drew the dissatisfaction of Sidious, who ordered Dooku to eliminate his apprentice. Ventress, who narrowly escaped Dooku's hand, decided to seek revenge and became a bounty hunter. When Ahsoka Tano was falsely accused of murder and went on the run, Ventress tracked down the fugitive Ahsoka. Despite having fought each other many times before, Ventress ultimately chose to help the Jedi Knight who shared her fate, revealing that the wandering warrior still retained her kindness deep down. 

 

Darth Sidious 

 

Palpatine's two lightsabers have the same shape but are not exactly the same color. When lit, they produce a blood-red blade nearly one meter long. These two lightsabers are usually hidden in a statue in his office and are only used when absolutely necessary.

Before the throne in Mandalore's capital Sundari, Sidious, facing his former apprentice Maul, instantly killed Savage with an extremely strange two-saber swordsmanship. After a battle with Master Windu, this lightsaber was kicked away and flew into the night sky of Coruscant. 

 

Analysis of the possibility of Count Dooku: 

Darth Sidious may have taught dual lightsaber combat techniques after taking Count Dooku as his apprentice, but no record of their use has been found in the manga-anime either.

Instead, both of Count Dooku's apprentices, General Griffith and Asajj Ventress, learned to use dual lightsaber techniques, and even General Griffith pioneered quad lightsaber combat techniques through robotic construction. It can be surmised from this that Count Dooku actually knows the dual lightsaber combat technique as well, and that his Force skills are more powerful than his lightsaber skills, so he forgoes the dual lightsaber combat technique in battle.

Count Dooku is so powerful in the Force that not even his master, Yoda, can best him.
